reading a recipe that's like "but if you don't have any galangal, you can substitute ginger" and it's just ... just no.
imagine if you were reading a recipe for hawaiian pizza and it said "but if you don't have any pineapple, you can substitute lemon; they're both fruits that are yellow and sour so ... close enough"
